Menu Planning Monday




The girls are home from EFY. It sure was different having them gone. This week we get to leave the scorching 113 degree heat and head to the beach in Southern California. It will be the longest 4 days of my life. But, it should make for an easy menu.

Monday: chicken fajitas
Tuesday:spaghetti and meatballs
Wednesday:ground turkey and bell peppers
Thursday:leftovers
Friday:California
Saturday:beach
Sunday:California

Menu Planning Monday




After spending a weekend in San Francisco, this week felt even hotter to me here. Oh well, in a couple of weeks we will try to head to Southern California to the beach. I changed my menu yesterday because I had not asked my hubby what he wanted for dinner. We had roast and roasted potatoes. This week we will be celebrating our 22nd wedding anniversary. I can't believe I am old enough to be married that long. It's been an amazing adventure. I am truly blessed.

Monday: Leftover roast from Father's Day
Tuesday: grilled mahi mahi
Wednesday: spinach ravioli (from Costco)
Thursday: Anniversary dinner out
Friday: chicken burgers
Saturday: take kids out
Sunday: crockpot chicken

Menu Planning Monday



Hubby and I returned late last night from an early anniversary trip to San Francisco. It was perfect because we went to San Francisco on our honeymoon, and then ended up living there for six years after graduating from college. We had not be back for 12 years, so it was high time. In 10 days we will celebrate 22 years of marriage, but we could only get away last week. Grandma came into town yesterday and rescued the kids by making them a fantastic dinner of pork chops. We had some fine dining ourselves in the city.

As I am planning this menu, I haven't been to the store and I don't really know what we have, but I will wing it and figure it out as we go.

Monday:leftover pork chops from Grandmas great meal
Tuesday:crockpot chicken
Wednesday: chicken tacos
Thursday: Spaghetti and meatballs
Friday: turkey burgers and hot dogs
Saturday: date night
Sunday:Grilled mahi mahi

Menu Planning Monday



What a crazy week we had. We ate way to much on Memorial Day with some of our family visiting. My dad, husband, son and I got to go golfing Monday morning. I probably haven't golfed in 10 years, but it was so fun. I even birdied the final hole. Very exciting. We also took the family to see Kung Foo Panda II. Pretty funny!

Tuesday, our son went through the temple in preparation for his mission. That was definitely my happiest day so far as a parent. After we tried out a new restaurant called "La Parilla Suiza". It touts the food of Mexico City, which is where my son will be serving our church for 2 years. Super yummy!

Wednesday was my birthday. 21 again (x 2). I had lunch and dinner out with my honey. Lucky girl.

Thursday our 3 older kids left on a pioneer trek.

My point to all this is that I did not cook a meal until Sunday when we celebrated my sons 19th birthday. He wanted anything that we could have mashed potatoes and gravy with, so we had pork roast. It is my go to crock pot meal because I cannot eat beef. My kids barely know what beef looks like except for the occasional steak that gets grilled.

This week will be slightly better except for the fact that my husband and I are taking a little trip. I will write about it next week. I am planning meals for the kids, but what happens when mom and dad are away is sometimes kept secret.

Monday: pulled pork sandwiches (from leftover pork roast)
Tuesday: ground turkey quesadillas
Wednesday:skillet chicken parmesan
Thursday:take out before we head to the airport
Friday: spinach ravioli (from costco)
Saturday: pizza night
Sunday: kiddos looking for family to feed them. (We will be home late)
