This week has felt really long. We are having a big birthday in our home this week. Rachael is turning sweet 16. It is hard to believe we will have our third driver. I have to say with 6:45 a.m. school, I am looking forward to it. We started celebrating last night and it will continue through tomorrow. We like to stretch things out around here. We are having quite the warm winter, so we haven't had the chance to enjoy many soups. We are supposed to hit 80 this week. So, we've already been hitting the grill.

Menu Planning Monday
We had the most delicious pork roast tonight. After putting the roast in the crock pot I added Worcestershire and chicken broth. I put a simple seasoning of Celtic sea salt and Mrs. Dash as well as some minced garlic. Then, I sprinkled a little brown sugar over the top of the roast. I cooked it for 8 hours. Can I just say that the gravy was the most delicious I have ever had? Oh yeah! I make a simple rue with butter and flour, then add the drippings. I could almost drink it. Not really. However, I am looking forward to having some leftovers.

Menu Planning Monday
I love three day weekends. However, this just reminds us that tax season is beginning. That means several months of not having Orson home for dinner. This lifestyle is what led me to not cook very often when my kids were little. Now that they are older, and I treasure dinner time, it is crucial for me to continue to cook, even though Orson eats at work.

Menu Planning Monday
It was so great to be back in the menu mode. It sure made the week run more smooth. I was able to exercise 5 days this week. I started running again. I am hoping I can run a full mile by the end of the month. As we get away from the holidays, the junk is dwindling. I also made breakfast all week for the family. I know that sounds crazy, but I have just never been one to do that. I feel great being able to do that. It was different to be home all week. Of course, I was still super busy.

Renewal
Well, it has been a hectic few months for me. I have not been taking care of myself the way I would like. My meal planning has gone by the wayside and I have missed it so much. My journey of health has been completely neglected. I am ready for a new start. My job came to an end last week and I am planning on taking the month off to get things organized and get back on track. The first thing I need to do is get some healthy meals planned and then get back to exercising. I have a big goal for this year, but for now I just need to start running again.
