Menu Planning Monday


My back was starting to feel a lot better until Friday. By the end of the day I was in a lot of pain again. So, still not back to exercising. Having the simple menu really helped last week. I am going to hopefully try a few new recipes this week.
The heat has been so unbearable. We are going to check into a local resort on Friday and spend the weekend since it has a water park.

Monday: fetuccini alfredo with chicken (lower fat version)
Tuesday: Boston blue chicken and apple salad
Wednesday: chicken pesto pasta
Thursday: leftovers
Friday: dinner at the resort
Saturday: date night
Sunday: BBQ

Menu Planning Monday


Well, the week went fairly well. I started exercising on Monday, and by Wednesday, my back was hurting something fierce, so I was down for the next 3 days. I'm not sure when I will get back to running, but I hope it's soon. I got an app on my ipod that takes you from the couch to a 5k in 8 weeks, running just 3 times a week. Now, I have run several 5k's before, but it's been a while and I've put some weight back on, and I am pretty slow.

I was so excited that my family liked the white quinoa meat loaf. It was a gamble, but it paid off. It's actually the only recipe I stuck to. But, that's okay, we sometimes have weeks like that. However, we always manage to find food somehow.

I've really been looking around for healthier meals. I got a few cooking light magazines and a new book by Rocco Dispirito where he takes really fattening meals and makes them much more healthy. I am going to try a few this week.

Monday: cheese ravioli with pesto and pine nuts
Tuesday: chicken fajitas
Wednesday: lemon pepper shrimp
Thursday: leftovers
Friday: turkey burgers
Saturday:date night
Sunday:BBQ

Menu Planning Monday


It was great to get back to my menu plan. I really enjoyed cooking and eating all the dinners I had planned. The kids even liked all of them. Amazing. School started on Wednesday and now we are back in full swing. The routines are a little rusty, but they should come back soon. I have really gone away from my healthy eating and I am not feeling so good. I much prefer to put good food in my body (not too much of it!). It makes me feel better inside and out. I am wanting to get back in shape to prepare for my annual Thanksgiving 5k. Then, I have set a goal for myself to run a half marathon next year. So, I am going to start posting my exercise routines again on this blog along with how my eating went during the day. This will help me be accountable to myself. If you are out there reading, I'd love some encouragement.


Monday: baked shrimp scampi
Tuesday: white quinoa meat loaf
Wednesday: basil chicken and vegetables
Thursday: bbq chicken pizza
Friday: leftovers

Menu Planning Monday



These past few weeks have been so hectic. We finally got my son off to the MTC. He will spend 8 weeks there before heading to Mexico City for the next 2 years. Also, school starts on Wednesday, so we are preparing to get back to our routines.

Monday:leftover pork roast and mashed potatoes
Tuesday: skillet vegetable lasagna (back to school dinner)
Wednesday:One pot southwest chicken and rice
Thursday: homamade pizza
Friday: turkey burgers with romaine slaw
Saturday: date night
Sunday: bbq chicken
