Last week we managed to eat good meals every night, but with some adaptations. That's what life is all about. We really enjoyed the tilapia with avocado salsa. I had never broiled my fish before and it turned out well. The salsa would have been even better if my avocados hadn't been hard as a rock. It was still good without them. So, a couple of items we will try to get in this week.
Monday: Tomato Basil Parmesan Soup
Tuesday: apricot chicken with spaghetti squash
Wednesday: chicken noodle soup
Thursday: leftovers
Friday: pizza for Rachael's birthday party
Saturday: date night
Sunday: bbq chicken and steak

Oooh, that Tomato Basil Parmesan Soup looks so good! My son and I love tomato soup, but my husband doesn't care for it, so I think I'll whip up a batch and freeze it for lunches at school & work. Thanks for sharing the recipe!
